A Sofer STa"M is a Jewish Torah Scribe (writer) who Hand writes Torah Scrolls, Tefillin, Mezuzhas, Megillas according to the Jewish laws and Tradition.

The Word Sofer stands for a Scribe, it comes from the word in Hebrew סופר that means Counting, the Sofer's job is to write the Torah and count every letter to make sure nothing is missing,

The Torah teaches us that if there's even ONE letter or even PART of a letter missing in the Torah it it makes the Torah Not Kosher.
